Can someone tell me the standard to expect from adult hosting? This is
not our expert area and I'm unsure how often we should expect a site
hosted on a dedicated server to go down or etc. Is there a website that
compares web hosts and provides quality stats?

Might want to check out one of those hosting review sites.  A real
one, that has comments from actual hosting customers.  I've found
findmyhosting.com/ helpful.  Mostly in figuring out what I should be
asking in my presale questions.
