I sometimes use PageMaker to compose my documents (which I later export
into html.)

One of the things I haven`t figured out yet is how to specify tags and
meta headers within PageMaker. Is it possible to edit my html documents
in a text editor like TextEdit or Terminal instead of HomePage. If so,
which is better? When I use (Claris) HomePage on a document that was
originally created with PageMaker, some features not supported on
Classic gets lost.

You're really going to be better off using a plain text editor, HTML-Kit
comes to mind <http://www.chami.com/html-kit/>.
