I copied over all a tape onto my computer now to make the file more
manageable and to save disk space I am deleting the parts I don't want. Then
I am exporting the movie. Am I loosing quality as long as I stay with the
AVI-DV?

Nope. It's lossless. Just don't choose to compress. Be aware than you'll
only get mere minutes' on each CD's-worth of HDD space...
