Adding a vertex to a circle

| I put an oval over the "stage" and how do I add a vertex somewhere
along the edge of the oval?

I'm not sure what you mean... Do you want a point to come out from the
circle like a teardrop? If so, select the Convert Anchor Tool
(shortcut:Shift+C) in the Pen Tool flyout and click one of the anchor
points, the use the Direct Select Tool (A) to drag the point outward.
Then if you want it pointing in a different direction, just rotate it with
the rotate tool or in the transform palette.
If that's not what you want you'll have to explain further, sorry.

I think it would be easier to just draw a face instead of trying to edit an
oval, but you can start with an oval and use the Pen(+) tool to add points,
the Convert (Shift C) to change and anchor from corner to smooth.
Alternatively, you can create other shapes to add or subtract from the oval
using the Pathfinder palette. Just dive in and learn you tools.
If you try the teardrop example I gave you previously, you can then use the
Convert Anchor Tool to make that point a curve that might simulate a chin if
rotated to the bottom. Add more points and go from there. This is quick and
not right at all, but it shows what I mean:
