I've a patchwork background with many colors.

IF I do write in black and some letters aren't visible (due to background)
same if I do write in white, other letters aren't visible.

How to change the colors on a same letter depending on the color background
?
I've even some letters that may be half white and half black

I think what you are looking for is the compound path and
the mask function. Try it out. Be aware the background
(outside of the text) will disapear, if you do not want that
you can always replace it and align the whole thing.
Also it is worth while to experiment with Pathfinder.

Try this:

1. Lock the text.
2. Shift-select each of the color blocks that will "compete" with the
text. (For instance, if the text is black, shift-select all of your
black (or dark) colors.)
3. Unlock the text and shift-select the text (so that it's selected with
the previously selected colors.
4. Click Pathfinder / Exclude

The portions of the text that are overlapping the dark areas should now
be visible.

It worked for me, though I only had a simple black/white chess board
pattern on one layer, and a large black text word on a second layer.
Portions of the black letters that overlapped the black squares were
white, while the remaining portions of the black letters that overlapped
the white squares remained black.

could this only be possible with outlined text (changed to paths)?

I didn't convert my text to outlines and it worked fine.

you are right, bill. i've tested it and it works (thanks!) - it became a
"compound form" . but this form works only with one filling colour or
gradient over all

Yes, the background "patchwork" areas being excluded adopt the color of
the text fill, while the excluded text areas become white. If the text
is a gradient, the gradient is eliminated and the text (and excluded
regions below) become the right-most color on the gradient slider. (Why
the right?)

You could try the really simple option of making a slight halo around
the text.

If you are just using black and white, create an RGB document, make the
text white, and set its transparency mode to Difference.
