I am having a heck of a time learning Illustrator, but making progress
with the pen tool, tracing and modifying a falcon photo, to create a
shape for a logo.

What I am wondering now, that I cannot seem to find, is how to change
the color shown for the outline of a path??

I am working on a white background, and the path outline, anchor
points, etc are all yellow, which is very hard to see! How can I change
this to blue or red?

I'm not sure to well understand what you want exactly but if you doubleclic on the layer in the layers window (Windows/show layers) you will be able to change the color of how the path appear while you draw.

But if you realy want to change the outline color of an object you have to clic on the outlined square in the color window (Windows/show color) and set a color. To change the weight you have to use the stroke window.
