Author Chopping bits off closed paths

What's the easiest way of achieving the result at
http://peterbell.net/images/path.jpg? - i.e. chopping bits out of the
outline of a filled object.

I did my version using clipping shapes - is this the best way of doing it?

Try the scissors tool, Nick.
Select your shape and click the scissors tool. Then click the node[s] where
you want to delete the line segment between them.

Thanks Gem, however that messes up the fills (as one might expect).

To rephrase the problem, is it possible to recolour parts of a path,
maintaining the whole as a closed path allowing it to be easily filled?

oh, ok I see what you mean.
If you draw the object with the pen as a single closed path you can give the
path a wide stroke with the edge color.
Then select the object and go to Object>Expand and expand just the stroke.
This will separate the path into 2 objects: the stroke and the solid inside.
Look in the layers palette, move stroke section below the solid inside part
if it is on top. Select the solid inside piece and resize it by either using
the direct selection white arrow tool for the individual endpoints or freely
resize the whole object to meet/cover the edges of the stroke section.
