| Could someone please help me out here. I wish to create some illustrator
artwork but I only want to use 256 color. I am trying to recreate an old
piece of artwork which I know was made in 256 color mode. How can I limit
illustrators color palette so it only has the 256 color spectrum (not the
Web Safe one which is 216)?

Just save it out as a GIF in 256 colors when you are done with it.

| I thought of that but I need to recreate it in a 256 color mode within
illustrator, as in I want to retain it in vector format but have the colors
only from the 256 color spectrum.

The 256 colors can be any 256 colors. There is no one palette.
