I have CS2 with Bridge.

What is your simplest/preferred workflow for organising image files using
Bridge (or, any as a second choice, any other software).

I would prefer to use CS2/Bridge but want an easy to use method to be able
to categorize and find my images.

IMHO bridge is too slow to be useful. If your images are all on the hard
drive, try using picasa. It's free from Google, and among its many features,
it allows you to categorized and search your images.

Personally I use a program called ACDSee that allows me to catalog images
that I've offloaded to CD.
