For black and white portraiture it's sometimes desirable to use only
the green, only the blue or maybe a combination of the two. After
making all the necessary adjustments, what is the best way to create a
printer-ready image from only one or two channels?

Use the Channel Mixer with the monochrome box checked.

After you have chosen the proportions of each channel you can either leave
the now black and white image in RGB or convert to grayscale.
