I second that. Unless you need to have a GUI on the machine as well,
in which case go for Ubuntu (which is essentially Debian with a pretty
front end).

I thought about mentioning that gui thing with Ubuntu but decided against
on the grounds that the o/p definately asked a server Q. Also, Ubuntu
does wierd (to me) stuff with user:root.

I like Mandriva. Nice and easy to install; comes with Apache, PostgreSQL,
MySQL, PHP, PERL and Python, and all the libraries you need to get them to
talk to each other; includes a decent firewall; what more could you want?

Don't forget easy urpmi. Set up your sources and dependency worries
are a thing of the past- makes package installation stupidly easy.

I considered mentioning it, but decided "easy to install" covered it. I've
got a mixture of Debian, Mandrake (old version, prior to the name change)
and Windows servers at work; and urpmi is IMHO the best package manager of
the three.
