well u can do a frame by frame of the different colours then stick
gotoAndPlay(1); at the end. You can do it in actionscript but i am very unsure
of it.
for Text it would be: create a new text box and the put the instant name of
my_txt.
my_txt.text = "this will be red text";
my_txt.textColor = 0xFF0000;
//and then for every frame change the textColour property

and i don't know of away for changing a fill in a shape

if you are looking to not use actionscript - convert it to a symbol - then create several keyframes
with any number of frames in between - select each instance and use TINT and different colors for
each keyframe - then apply motion tweens between each.
