| I would convert the sentence into graphics by breaking apart the font symbols (cmd +B), then use the fill tool and gradient direction tool to adjust as needed the entire fill area (your sentence).

Lou's suggestion will work fine, but here is another way where you
don't have to individually fill transform each letter..
Using static text, write out all the text.. word, sentence or
paragraph.
Make another layer below the text layer
Draw a borderless rectangle just larger than the text area
Use paint bucket tool to drag a gradient on the rectangle. Use any
angle of drag. If you want to change the angle afterwards, use the
fill transform tool.
Set the text layer as a mask layer.
That's it!
