Validating and Entities: What did I do before?

| I have Dreamweaver MX 2004 version 7.0.1, though I'm still kind of a newbie
with it (though not to hard HTML coding.) About two months ago I sat down
and used Dreamweavers's validating tool to test and fix a personal website
of mine so that it was compliant with XHTML (Transitional if I remember
correctly, since that's what all of the html files DTD's are set for.) One
thing I noticed at the time was that the results told me to change all
apostrophes (among other symbols) to their "&" entities, which I gladly did.
Today I worked on a new page for the website, but this time, no matter how
much I try the validating tool and its settings, I can't get it too suggest
those strict guidelines for apostrophes and most other symbols, again.
My question is, what did I do last time that made the validator behave that
strictly? How can I get it to do it again? Also, is there anyway I can get
Dreamweaver to automatically convert grammar symbols like this to their
entity values? Even when Dreamweaver was working the way I wanted it too a
couple of months ago, I still had to make the changes via a batch find and
replace. I'm just wondering if there is a easier way. I appreciate any help
anyone can give me.
