| I would like to auto stretch my site but is there a way to restrict how much it does.

By saying auto stretch I gather you are using layout mode in DW. If so, get
out of it :-) and into design view.
Learn how to build tables correctly - (I'm guessing that you are using
tables).
Check out the flexible table tutorial in my sig - this will help you learn
how to build designs that 'fit' into all browser window sizes .
