Author Page Titles in Templates

Greetings to all:
I'm new to DWMX and this may be a basic question, but I cant seem to locate an
answer:

Using all template based pages in a web site, it does not allow me to place a
different page title in each individual page. If the temple has a blank title,
it wont accept a new title on any page. If it has text in it, then it wont let
me change it.
Should I be using an attribute for this (if so how do I do that?) or am I
approaching this the wrong way?
